This may seem like a dumb question, But can I just add anchors into my html, with my keywords in them:-
<a name="keyword1"></a>
<a name="keyword2"></a>
..and so on?

If I understand the question correctly...YES! You can add anchor text to your own site. BUT......
#1 Some people believe that only one link per specific URL counts and if you list more the anchor text it is ignored.
#2 This can look spammy if you put up too many, IMO
I always use my footer text navigation as a place to put my anchor text. For example:
Home | Services | About | Contact
into:
Keyword | Services | About | Contact
Make sure to put titles on them too

So, is it "spammy" to have three links to my directory on my HP, all with the same exact anchor and URL?

Well it's more useless, it's the 1st upper left link that will be counted the rest is not.

Why wouldn't you use metatags to put your keywords in them?

I have done that as well, but I just found out you can use anchors to put text on a page that the user cant see, I spose I was asking if its ok to do this, cause the anchors below do nothing except hold keywords,
<a name="keyword1"></a>
<a name="keyword2"></a>
..and so on.
Is this ok to do?

Repeating keywords too often will cause the filters to kick in. This causes more harm then good.
