I have a website that has a few hundred webpages. Can I list all of the links to these pages in my sitemap or is it suggested to break the sitemap into several pages?

100 links max is a guideline for visitors useability. You can make a map with more links as long as it does not exceed 100k in size for the page.

So the search engines will not accuse my site of spamming if there are 500 links on my sitemap (one page) pointing to other pages on my site?

No, it's generally accepted that they will follow the links up until the 100K file size. It might be better to break it up a bit though. Maybe a site map linked site wide with links to 10 pages for specific categories/products with 50 links apiece.
