I actually try to optimize link pages as much as possible, so I use a related keyword if I can dig any up.
For instance...I manage a site that sells pasta machines for restaurants. I did a quick keywords stats check and decided to name our link page "restaurant-resources" along with the title "Restaurant Manager Resources". This is a keyword phrase that's actually being used by our targeted customers, so how could I pass that up?
If you're running a retail site you'll often find that people use generic terms like "shops" or "store". Other terms could be "ideas" or "sites".
I figure if you're going to create a sitemap or links page then why not optimize it.
